A Recipe for today...Roasted Veggies

I love Roasted Vegetables. The flavors that arise from the oven roasting are quite different than when you saute, poach or even fry. I think there is a depth of flavor that comes through. Here is one of my favorite blends:

1 medium sized onion
5 small red-skinned potatoes
5 small white potatoes
1/2 cup of sliced mushrooms
1/2 cup of broccoli florets
2 thinly sliced yellow squashes
2 thinly sliced zucchini squashes
1/2 cup of red bell pepper

Mix together and spread all ingredients out on a large cookie sheet. Mix together equal parts, lemon juice and olive oil. Pour over the vegetables. Add your select seasoning, I prefer cajun seasoning. Place in a pre-heated 450 degree oven for 20 minutes, stirring every 5-7 minutes. After 20 minutes, increase the temperature to 500 degrees for 3 minutes then remove from the oven. Voila! Roasted Veggies!
